BIRMINGHAM, Ala. — Many people outside of the Heart of Dixie haven’t heard of white barbecue sauce. Heck, there are even some lower Alabama natives who would be surprised to see it show up on their sandwich, but for North Alabama residents, white BBQ sauce is not only standard on the table, it’s absolutely expected.

It’s the only sauce we know here, because it’s what everyone grows up on,” said world barbecue champion Chris Lilly of Big Bob Gibson Bar-B-Q in Decatur in an interview with Southern Living.

Big Bob Gibson is credited with inventing the mayo-based sauce traditionally paired with chicken way back in 1925.

Now with BBQ restaurants across the state, and at least one Alabama-based BBQ chain, Jim’N Nicks, serving it across the country, more and more people are being introduced to the tangy, creamy condiment.
